Tater Tot Turkey Casserole is a comforting dish featuring ground turkey, vegetables, and tater tots baked to golden perfection.

Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 bag (32 oz) frozen tater tots
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet, cooking for an additional 2-3 minutes until the onion is translucent.
  4. Stir in the frozen mixed vegetables, cream of mushroom soup, milk, dried thyme, salt, and pepper. Mix well and let simmer for 5 minutes.
  5. Transfer the turkey mixture to a greased 9×13 inch baking dish, spreading it evenly.
  6. Arrange the frozen tater tots on top of the turkey mixture in a single layer.
  7. Sprinkle the shredded cheddar cheese over the tater tots.
  8. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.

Notes

  • You can substitute ground turkey with ground chicken or beef.
  • Feel free to use different vegetables based on preference.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
