A comforting and flavorful dish where tough cuts of beef transform into melt-in-your-mouth tenderness through slow cooking.

Ingredients

Scale
  • 23 pounds beef brisket (preferably with a good amount of marbling)
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  3. Season the brisket with salt and pepper, then sear it in the hot oil until browned on both sides, about 4-5 minutes per side.
  4. Remove the brisket and set it aside on a plate.
  5. Add the chopped onion and garlic to the pot and cook until softened.
  6. Pour in the beef broth and red wine, scraping the bottom of the pot.
  7. Stir in the brown sugar, Worcestershire sauce, and thyme.
  8. Return the brisket to the pot, cover it, and transfer to the oven.
  9. Cook for 3-4 hours until the meat is tender.
  10. Slice the beef against the grain and serve with the cooking liquid.

Notes

Don’t skip the searing step, and let the brisket rest for about 10 minutes after cooking.
