Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup carrots, shredded
  • 1/4 cup red bell pepper, sliced
  • 1/4 cup green onions, sliced
  • 1/2 cup peanuts, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the shredded cabbage, chicken, carrots, bell pepper, green onions, peanuts, and cilantro in a large bowl.
  2. Whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, lime juice, salt, and pepper in a separate bowl.
  3. Pour the dressing over the salad and toss well to combine.
  4. Serve immediately or refrigerate for about 30 minutes before serving.

Notes

Customize with tofu for a vegetarian option or add avocado slices for extra creaminess.
