  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup buttermilk
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. Cream together the butter and sugar until light and fluffy (2-3 minutes).
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the fresh lemon juice and zest.
  6. Gradually add the flour mixture and buttermilk, alternating between them until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack.
  10. Mix the powdered sugar with the fresh lemon juice for the glaze and drizzle it over the cooled loaf.
