Watergate Salad is a delightful no-fuss treat that combines the sweetness of pistachio pudding with the texture of crushed pineapple and whipped topping.

Ingredients

  • 2 boxes (3.4 ounce boxes) pistachio pudding mix
  • 20 ounces can of crushed pineapple in juice
  • 12 ounces whipped topping
  • ½ cup chopped pecans
  • 1½ cups white mini marshmallows
  • chopped pecans and maraschino cherries for garnish
  • 1 cup shredded coconut (Optional)

Instructions

  1. In a large bowl, mix the crushed pineapple and pudding mix until the pudding mix has completely dissolved and the pineapple pudding mixture is thick.
  2. Stir in the pecans and mini marshmallows, and optional shredded coconut.
  3. Fold in the whipped topping.
  4. Transfer the Watergate Salad to a serving bowl and top with chopped pecans and cherries.
  5. Refrigerate for one hour or until ready to serve.

Notes

  • Make sure to use the pineapple with juice for the best flavor.
  • This salad can be prepared a day in advance and stored in the refrigerator.
  • Garnish with additional coconut if desired.
