A delightful blend of tangy rhubarb and zesty lemon, this bread is perfect for breakfast, snacks, or dessert.

Ingredients

  • 3/4 cup butter, unsalted
  • 1 1/4 cups sugar
  • 1/3 cup sour cream
  • 1 1/2 tbsp lemon zest
  • 1 1/2 tsp vanilla essence
  • 2 eggs
  • 1 3/4 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground cardamom (optional)
  • 1 3/4 cups rhubarb, diced
  • 1/4 cup rhubarb, thinly sliced
  • 2 tbsp sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing it or lining it with parchment paper.
  3. Mix together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, then the sour cream, lemon zest, and vanilla essence. Stir until smooth.
  5. Combine the flour, baking powder, salt, and cardamom in another bowl.
  6. Mix the dry ingredients into the wet mixture gently.
  7. Fold in the diced rhubarb carefully.
  8. Transfer the batter to the prepared loaf pan.
  9. Sprinkle the sliced rhubarb and 2 tablespoons of sugar on top.
  10. Bake for 60-70 minutes, or until a toothpick comes out clean.
  11. Cool in the pan for 15 minutes, then on a wire rack until completely cooled.

Notes

Serve with whipped cream, butter, or cream cheese.
