A delightful summer appetizer featuring grilled peaches on crispy baguette slices, drizzled with balsamic glaze and topped with fresh basil.

Ingredients

  • 2 ripe peaches
  • 1 medium-sized baguette or Italian bread
  • 23 tablespoons olive oil
  • Balsamic glaze for drizzling
  • A handful of fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat, about 10 minutes.
  2. Prepare the peaches by cutting in half and removing the pit; brush with olive oil.
  3. Grill the peaches cut side down until grill marks appear, about 3–4 minutes.
  4. Slice the baguette into 1/2 inch pieces and brush both sides with olive oil; grill until crispy, about 1–2 minutes per side.
  5. Chop the grilled peaches and mix with chopped basil, salt, and pepper in a bowl.
  6. Assemble the bruschetta by topping grilled bread with the peach mixture and drizzling with balsamic glaze.
  7. Serve immediately and enjoy!

Notes

For best results, choose ripe peaches and don’t rush the grilling. Customize with cheese or different herbs if desired.
