Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • 1/2 cup cooked and crumbled bacon (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheese, diced vegetables, and optional bacon. Season with salt and pepper to taste.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes or until the egg bites are set and slightly golden on top.
  6. Allow to cool slightly before removing from the muffin tin. Serve warm or store in the refrigerator for meal prep.
