Homemade Spanish Rice

A comforting and flavorful side dish that’s quick and easy to make.

  • 1 1/2 cups long-grain white rice
  • 2 tablespoons olive oil
  • 1/2 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup diced tomatoes, drained
  • 2 1/2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Rinse the rice under cool water until it runs mostly clear.
  2. Heat olive oil in a large skillet or saucepan over medium heat.
  3. Add the rice and toast for about 4 to 5 minutes, stirring often until it’s lightly golden.
  4. Toss in the diced onion and cook for 2 to 3 minutes, until softened.
  5. Stir in the minced garlic and cook for another 30 seconds.
  6. Stir in the tomato sauce, diced tomatoes, cumin, chili powder, smoked paprika, salt, and black pepper.
  7. Pour in the chicken broth and give it a gentle stir.
  8. Bring it to a light boil, then reduce the heat to low and cover the pan.
  9. Let it simmer for 18 to 20 minutes or until the rice is tender and the liquid is absorbed.
  10. Turn off the heat, let the rice rest for 5 minutes, covered.
  11. Fluff the rice with a fork and stir in the chopped cilantro and lime juice before serving.

Notes

Use fresh lime juice for best results. Adjust seasoning to taste.
