A quick and nutritious bowl featuring quinoa, succulent chicken glazed in hot honey, fresh tomatoes, and creamy avocado, perfect for busy weeknights.

  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 1 lb chicken breast, diced
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Rinse quinoa under cold water. Combine it with water or chicken broth in a pot. Bring to a boil, then reduce heat and let it simmer for about 15 minutes.
  2. Meanwhile, in a skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook it until golden and cooked through—this takes around 6-8 minutes.
  3. Drizzle hot honey over the chicken and stir to coat.
  4. Once the quinoa is done, fluff it with a fork and divide it into bowls.
  5. Top the quinoa with your hot honey chicken, halved cherry tomatoes, and slices of avocado.
  6. Garnish with fresh herbs if you want and serve immediately.

Notes

For extra flavor, cook quinoa in broth instead of water. Store leftovers in an airtight container for up to three days.
