  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, beat together the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the lemon juice, zest, and vanilla extract until well combined.
  5. Carefully stir in the flour and salt until just combined. Don’t overmix.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 22-25 minutes, checking for a toothpick to come out clean.
  8. Let them cool completely in the pan before adding the glaze.
  9. For the glaze, mix together powdered sugar, lemon juice, and zest until smooth, then spread over the cooled brownies and chill for 15 minutes before slicing.
