A moist, fluffy cake bursting with lemon flavor, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons lemon juice (for frosting)
  • Lemon slices (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the cake pans.
  2. Cream the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the milk, lemon zest, and lemon juice until well combined.
  5. Combine the flour and baking powder in a separate bowl and gradually add this to the wet mixture.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Cool the cakes in the pans for about 10 minutes before transferring to wire racks to cool completely.
  9. Make the frosting by mixing powdered sugar with lemon juice until smooth.
  10. Frost the cooled cakes and garnish with lemon slices.

Notes

For fluffier cakes, whisk flour before measuring. For stronger lemon flavor, add more zest.
