  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup neutral oil (like vegetable or canola)
  • 4 large eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon orange zest (optional)
  • 1/2 cup chopped pecans or walnuts (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and lining them with parchment paper.
  3. Mix the dry ingredients in a medium bowl: flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  4. Combine the wet ingredients in a large bowl: brown sugar, granulated sugar, oil, eggs, buttermilk, and vanilla.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 28 to 34 minutes, or until a toothpick comes out clean.
  8. Cool the cakes in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  9. Beat the cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and salt until fluffy.
  10. Assemble the cake by placing one layer on a serving plate, spreading frosting on top, adding the second layer, and frosting the top and sides.
  11. Finish with orange zest or chopped nuts, if desired.
