Savory Birria Tacos filled with tender, juicy shredded beef and dunked in delicious consommé, offering a rich and hearty experience.

  • 2 lbs beef chuck roast
  • 4 cups beef broth
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions and cilantro for garnish

Instructions

  1. Toast the chiles in a skillet until fragrant (about 2-3 minutes). Then soak them in hot water until soft.
  2. Blend the soaked chiles with beef broth, chopped onion, garlic, cumin, oregano, salt, and pepper until smooth.
  3. Prepare the beef in the slow cooker and pour the blended sauce over it.
  4. Add the remaining beef broth, ensuring it barely covers the meat.
  5. Slow cook on low for about 480 minutes or until the beef is tender and shreds easily.
  6. Shred the meat and return it to the sauce.
  7. Build tacos by heating corn tortillas and filling them with the birria mixture, garnished with chopped onions and cilantro.

Notes

Avoid overfilling the tacos for the best experience. Consider making this dish a day ahead for deeper flavors.
