Strawberry Mousse with Strawberry Sauce

A light and fluffy strawberry mousse topped with a sweet strawberry sauce, perfect for any dessert lover.

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, pureed
  • 1 tablespoon lemon juice
  • 1 tablespoon gelatin powder
  • 2 tablespoons water
  • 1/4 cup granulated sugar
  • 1/2 cup fresh strawberries, sliced

Instructions

  1. In a medium bowl, pour 1 cup of heavy cream and add 1/2 cup of powdered sugar.
  2. Using an electric mixer, beat the cream and sugar on medium-high speed until stiff peaks form.
  3. Set the whipped cream aside in the refrigerator to keep it cool.
  4. In a small saucepan, combine 1 tablespoon of gelatin powder with 2 tablespoons of water.
  5. Allow the gelatin to bloom for about 5 minutes, letting it absorb the water and swell.
  6. Once the gelatin has bloomed, heat the mixture over low heat until the gelatin dissolves completely.
  7. Set the saucepan aside to cool to room temperature.
  8. In a blender or food processor, puree 1 1/2 cups of fresh strawberries until smooth.
  9. Add 1 tablespoon of lemon juice to the strawberry puree and mix until combined.
  10. Once the gelatin mixture has cooled, gently fold it into the strawberry puree.
  11. Carefully fold the strawberry mixture into the whipped cream, being careful not to deflate the whipped cream.
  12. Spoon the mousse mixture into individual serving cups or bowls.
  13. Refrigerate the mousse for at least 2 hours, or until it has fully set.
  14. While the mousse is setting, prepare the strawberry sauce by combining 1/4 cup of granulated sugar and 1/2 cup of sliced fresh strawberries in a small saucepan.
  15. Heat the saucepan over medium heat, stirring occasionally, until the sugar has dissolved and the strawberries have softened.
  16. Once the strawberries have softened, remove the saucepan from the heat and let it cool to room temperature.
  17. After the mousse has set, drizzle the strawberry sauce over the top of each serving.
  18. Serve the strawberry mousse with strawberry sauce immediately or store it in the refrigerator until ready to serve.

Notes

  • You can use frozen strawberries if fresh ones are not available.
  • Make sure the gelatin is completely dissolved to avoid lumps in the mousse.
  • This dessert can be made a day ahead for convenience.
